Easy Sloppy Joes

This recipe is all ours.  But then again, how hard are sloppy joes to make anyway?

1 lb of ground pork (this is my favorite, but you can use ground beef)

1 large onion

1 Tbsp minced garlic

1 jalapeno (seeds removed)

a splash of liquid smoke

1 jar of your favorite bbq sauce (read the label before you buy, a lot of bbq contains high fructose corn syrup and MSG)

You can also make your own sauce using ketchup, mustard, vinegar, worchesteshire sauce, liquid smoke, and spices–I have never succeeded in making one I really like, and buying a jar is easy, but give it a try if you like everything from scratch.

Brown onion, jalapeno, and garlic with about a tablespoon of butter.  When onions are almost translucent, add the ground pork and brown until no pink remains.  Add a splash of liquid smoke as you cook.  Pour in bbq sauce and let simmer on low heat for 30-45 minutes.  Serve on buttered, toasted buns and enjoy the messy tastiness!
